Our Favorite Irish Soda Bread Recipe

As the weather slowly starts to get warmer, we begin the spring season and all of the spring holidays and celebrations! St. Patrick’s Day is coming up and here at Closter Farm we have a variety of items to help you celebrate!

Looking to make your own corned beef? You can pick up a brisket at market and start brining! Keep in mind, your brisket should have 5-10 days to brine before cooking.

We will also have cabbage, carrots, potatoes and mustard to compliment your homemade or store bought corn beef!

A classic dish however is Irish soda bread, served with butter. Below is one of our favorite recipes, and you can pick up flour, eggs, butter and yogurt at market.

3 cups all purpose flour
½ cup sugar
1 ½ tsp baking soda
½ tsp salt
1 stick butter, slightly softened, cut up in pieces
1 cup (or slightly less) of raisins
8 oz. plain yogurt
1 egg slightly beaten
About ¼ cup of water

Preheat oven to 350 degrees. Grease bottom of pan (9 inch pie pan works or cookies sheet with sides). Combine all dry ingredients (except raisins) in mixing bowl. With 2 knives or a pastry blender, cut in butter until mixture resembles coarse crumbs. Add raisins. Stir in yogurt and beaten egg. (Batter should be thick and sticky). Add water until well combined.
Form dough into ball with 6 inch base. (Batter will be sticky). Place on baking tin.
Bake 40-45 minutes until knife inserted in center comes out clean (outside will be crispy brown).
Cool on wire rack. Serve warm with butter.
