December Farm Recipes

The weather is getting colder and we are still hard at work in the field! These lower temperatures yield slower grower crops, with richer, sweeter flavors. Below are some recipes that highlight some of our favorite produce this time of the year.

Chicories are leafy greens with a slightly bitter taste. These are enjoyed raw in salads or cooked!

This chicory salad recipe uses a light honey mustard vinaigrette to cut through the lovely bitterness from the chicories and has pecans for a slightly nutty flavor. You could even add a crumbled farmers cheese for additional creaminess.

Spinach is so flavorful at this time of the year, and can be enjoyed in a salad, in a smoothie, sauteed or creamed.

Looking for an easy holiday morning breakfast? This spinach and mushroom egg bake is a crowd pleaser and gets great flavor from the spinach and mushrooms!

Bok choy, totsoi and Tokyo Bekana and all great Asian greens that we have at market this time of the year. They have a lovely crisp flavor and are so easy to cook. Not sure what to season them with? Try this easy recipe!
