Keilbasa One Pan Pasta

Ingredients

  • 2 tablespoons olive oil

  • 1 lb smoked keilbasa, diced

  • 1 medium onion, sliced

  • 3-4 cups chicken stock

  • 1 lb penne

  • 8 oz spinach (frozen is fine)

  • 1 bunch turnips, with greens

  • micros

  • 1/4 cup grated hard cheese

  • vinegar (sherry, champagne or white balsamic)

  • salt and pepper to taste

Instructions

  1. Heat a large pan over medium heat and add olive oil.

  2. Add in kielbasa and saute until starting to get golden brown. Add in onions and saute until tender.

  3. Add in pasta and toast lightly. Add in stock, spinach and chopped turnip greens.

  4. Once the stock comes to a simmer, reduce the heat and cover. Stir occasionally, and check after 10 minutes. Once pasta is all dented, remove from the heat.

  5. In a bowl combine micros with thinly sliced turnips. Toss with salt, pepper, olive oil and your favorite vinegar.

  6. Plate pasta, top with the micro and turnip salad and grated cheese
